Healthy Pear Crumble

Ingredients:
(When E-Ditty and I made this we didn’t measure, so this is all very approximate, add or remove as you please)

2 Large Pears
a squeeze of fresh Lemon Juice
1/2 teaspoon of Vanilla Beans scraped from the pod (you could use vanilla bean paste)
1 cup Almond Meal
1/3 cup shredded Coconut
1 teaspoon Cinnamon powder
1 teaspoon or two of cold Butter
1 handful of raw crushed nuts (your choice)
1 tablespoon of Chia Seeds [I forgot this ingredient when I first posted the recipe… Sorry]

Method:

Preheat oven to 180 degrees celsius.
Core and chop/slice pears into small pieces. Place in a small bowl and combine with Lemon Juice and Vanilla. Place in two large ramekins or one medium sized dish.
For the crumble; combine Almond Meal, Coconut, Chia and Cinnamon. Add the Butter and rub to create bread crumb texture. Add the nuts and mix together.
Place crumble on top of pears and bake in oven until crumble is golden brown.
There may be a fair amount of liquid in with the Pears, don’t drain this off it’s delicious!

If you like you could add Blueberries or any other fruit to the mix, but Pears are what we had at the time.
