1 Tablespoon Spiral Organic Miso Paste (this comes in a variety of types, I usually use the white or shiro miso)
650ml of boiling water
4x handfuls of fresh baby english spinach washed
2x handfuls of fresh watercress washed
2x handfuls of fresh rocket washed
Juice of half a fresh lemon
Juice of half a fresh lime
1 tablespoon of Udo’s Oil
Place miso paste in a small bowl.
Fill sauce pan with 650ml water, bring to the boil. Add the baby spinach and stir in. Reduce heat.
Ladel some of the hot water into the bowl to dilute the miso paste. Mix until smooth and runny, add to the pan of spinach & water to bring back to heat, do not boil.
Prepare side salad of watercress & rocket (or whatever greens you wish), place lemon, lime juice & udo oil into a small bottle, seal with a lid and give a good shake. Dress the salad with dressing.
Serve the soup in two soup bowls with salad on the side.
